Warm spices, sweet apricots and soft sweet potato in a thick tomato sauce. It simmers by itself while you make the couscous, and the leftovers are even better the next day.

  • 1 large onion, chopped
  • 3 cloves garlic, chopped
  • 1 tbsp fresh ginger, grated
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon

  • 500 ml vegetable stock
  • 100 g dried apricots, halved
  • Salt and black pepper

To serve
